Description

The carrot ‘Yellowstone’ is a bright yellow variety that adds both color and sweetness to the garden.

It produces long, uniform roots with juicy flesh and a mild, rounded flavor that makes it appreciated both raw and cooked.

Its golden-yellow color runs all the way through, making it especially decorative in salads, vegetable mixes, and warm dishes.

Recipe tip for Yellowstone purée:Peel and slice the carrots, then boil them in lightly salted water until tender.

Drain the water and blend the carrots together with a knob of butter, a splash of cream, and a little grated lemon zest.

Season with salt and a pinch of nutmeg.

The result is a smooth, golden-yellow purée with a gentle sweetness that pairs beautifully with grilled fish, chicken, or lamb.

Care and cultivation advice

Sow directly outdoors when the soil is ready, or in late fall for an early spring harvest. Make sure to water the soil thoroughly beforehand and keep the seeds moist throughout the germination period. This variety grows best in humus-rich sandy soil, but regular vegetable soil or potting soil also works well. Sow very sparsely, preferably with 6-8 cm between each seed, and avoid thinning later.

This variety can also be sown and harvested throughout the season. It is important to remember that carrots should be grown in different locations each year to avoid harmful insects and diseases.
