Caprese Salad

Caprese with burrata, homegrown tomatoes & basil (2 servings)

Ingredients

• 3–4 ripe tomatoes (preferably different varieties and colors)
• 1 large burrata
• A handful of fresh basil
• 2–3 tablespoons good olive oil
• Flaked salt
• Freshly ground black pepper

Optional but very good

• A few drops of balsamic vinegar or balsamic cream
• Finely grated lemon zest (a little, a little it lifts everything)

Do this:

- Cut the tomatoes into slices or wedges. Place them on a large platter or plate.
- Lightly salt the tomatoes and let them stand for 5 minutes, this will bring out the sweetness in the tomatoes.
- Carefully shred the burrata or keep it as is in large pieces with your hands and place on top of the tomatoes.
- Top with basil, whole small leaves or roughly torn (not chopped).
- Drizzle with olive oil, season with salt and black pepper.

If you like: a few drops of balsamic vinegar or a minimal touch of lemon zest.
