This carrot-shaped variety can withstand cold and frozen soil, making it harvestable practically all year round. Two super tasty side dishes for this variety are parsnip fries and gratinéed parsnips, which go well with a wide range of dishes.

The potential uses for this magical root vegetable are enormous, but our absolute top tip for Guernsey is to make a really creamy parsnip soup with fried parsnips and topped with watercress.

Care and cultivation advice

Sow directly in the planting site when the soil has settled and is workable, or in late autumn for an early spring harvest. This variety thrives best in rich sandy soil, but can also grow in potting soil or vegetable soil. Make sure to water the soil before sowing and keep it moist throughout the germination period. Sow in groups of 3-5 seeds with a distance of 20 cm between each group.

Thin out after germination to one plant per group. Harvest as late as possible for larger parsnips, as this variety can be harvested all the way until spring when the ground thaws.
